Classic Method

Brut

Brut sparkling wine that was born from the selection of Chardonnay white wines. It is produced using the Classic Method with aging on the lees for over 60 months, in which it is subjected to a bimonthly bâtonnage.
The batônnage avoids the stratification of yeasts by expanding the softness and length of the taste, improving the intensity and cleanliness of the olfactory scents and giving greater finesse.

Pairings: red prawns with Arnad Lard on chickpea soup or salmon tartare with pink pepper and toasted Bronte pistachios with orange scent.

Alcohol: 12% vol.
Acidity: 5,5-7 g/l
Residual Sugars: 6-12 g/l

Martinotti Method

Prosecco D.O.C. Extra Dry

Extra Dry sparkling wine made from the selection of white wines obtained from the vinification of grapes of the Glera vine. Its scent is intense, fruity, fresh and delicately aromatic.

Pairings: fettuccine with lamb ragout, salted ricotta and parmesan chips, or sweet and sour monkfish with sultanas and pine nuts sultanina and pinoli.

Alcohol: 11.5% vol.
Acidity: 5-6,3 g/l
Residual Sugars: 12-17 g/l

Martinotti Method

Pinot Noir Rosé Brut

Brut sparkling wine made from a selection of wines obtained from the vinification of grapes of the Pinot Nero vine. Its flavor is fresh, mineral and
persistent.

Pairings: risotto with porcini mushrooms flavoured with currants and raspberries or with raw scampi with lime.

Alcohol: 12% vol.
Acidity: 5-6 g/l
Residual Sugars: 6-12 g/l

Organic Brut

Organic Brut sparkling wine made from grapes from certified vineyards cultivated according to organic farming methods. Its color is straw yellow with
greenish highlights.

Pairings: Tagliolini with white truffle or roasted rabbit with asparagus and Castelmagno cheese.

Alcohol: 11,5% vol.
Acidity: 4,8-6 g/l
Residual Sugars: 6-12 g/l
